2 Tbs water   1.5 Tbs soy sauce   ¼ teaspoon Chinese five-spice powder    2 Tbs mirin or sweet sherry 1 teaspoon sugar    1 bunch collard greens   Dash of rice vinegar Remove the stems and discard and then cut the leaves crosswise into 1 inch wide ribbons. 1 bunch collard greens ¼ teaspoon pepper 1 teaspoon sugar 1 teaspoon minced garlic ¼ cup olive oil ½ teaspoon salt Wash the collard greens and cut out the stems and discard. Stack the leaves (5-10 at a time), roll them up tightly and slice thinly so you have a chiffonade of greens. Heat the oil in a large pan over medium heat with salt, pepper, sugar and garlic. When the oil is hot, add the collards and stir often for 15 -20 minutes or until the collards are tender. Stir them occasionally to keep them from burning. Add more oil if necessary.
