Preheat the oven to 350 degrees. Cut the pumpkin in half, scoop out the seeds and lightly brush the cut side with oil. Bake on a large baking sheet cut side down until the skin can be easily pierced with a fork. Depending on the size of the pumpkin it may take from 40 to 60 minutes or longer. Scoop out the flesh and puree in a food mill or food processor. This method works with any winter squash.
