Baked Pumpkin to make puree for pumpkin pies or soup

Preheat the oven to 350 degrees. Cut the pumpkin in half, scoop out the seeds and lightly brush the cut side with oil. Bake on a large baking sheet cut side down until the skin can be easily pierced with a fork. Depending on the size of the pumpkin it may take from 40 to 60 minutes or longer. Scoop out the flesh and puree in a food mill or food processor. This method works with any winter squash. The pumpkin puree may be used in pies, cookies, muffins, etc. Measure enough of the puree for the amount called for in your favorite recipe. The puree freezes well too. 1 ½ -2 pounds winter squash 2 medium sweet potatoes 2 teaspoons chopped fresh rosemary or 1 teaspoon dried 2 tablespoons olive oil About 1 ½ cups apple cider Salt and pepper Heat the oven to 350 degrees, Peel the squash, cut in half and remove the seeds.
