Arugula Pesto

¼ cup pine nuts 1 bunch arugula ½ cup grated Asiago cheese ½ cup olive oil 1 clove garlic, finely chopped Salt and pepper to taste Toast the pine nuts in a dry skillet over med-high heat until they start to brown and become fragrant. Transfer the nuts a dish to cool. Combine the arugula, cheese, oil, garlic and the cool pine nuts in a blender or food processor; process until thoroughly combined and smooth. Season the pesto with salt and pepper.  Serve over pasta, roasted potatoes or steamed vegetables.
