Oh So Green!

1/4 cup olive oil                                                        ½ cup thinly sliced onion

1 garlic clove                                                             1/3 cup raisins

1 bunch Swiss chard or beet greens, rinsed and coarsely chopped

¼ toasted pine nuts or walnuts                                   1 tablespoon lemon juice

Salt and freshly ground black pepper

Heat 3 tablespoons of oil in a large skillet over medium-high heat.  Add the onions and cook, stirring occasionally, until golden about 15 minutes.  Add the garlic and cook for a few seconds more until it is aromatic.  Add the greens in batches, adding more as they wilt, (there should be enough water on the greens from rinsing them to cook them), cover and cook until all the greens are wilted.  Stir in the rains, nuts, lemon juice and 1 tablespoon of oil.  Season with salt and pepper to taste.

This is also great as a pizza topping or stuffed in mushrooms.
